If possible you should purchase your coffee weekly and store it in a small airtight container. The most significant cause of flavor loss is exposure to air, which causes the oils responsible for aroma and flavor to evaporate. For this reason whole beans keep better than ground coffee. For the best flavor grind your coffee right before you brew it.
The second biggest threat to coffee freshness is moisture. Always store it in a cool dry place. Avoid keeping your coffee in the refrigerator, moisture condenses on cold coffee when it's opened, and flavor deteriorates when the moisture is absorbed. For long-term storage, freezing well sealed coffee in an airtight container is an acceptable pracitce. However, don't take coffee in and out of a freezer or you will have condensation.
Water
Coffee is 98 percent water. The taste of the coffee is directly related to the taste of the water used to brew it. We recommend using bottled or filtered water for the best results.
Grind
Each brewing method has a different grind. If you grind the coffee too fine it will be bitter and over-extracted; too course and it will taste weak and sour. Just remember, the faster the brew cycle, the finer the grind, the slower the brew cycle, the coarser the grind. Make sure to grind your coffee for the type of brewing method you are using.
Proportion
The wrong proportion of coffee to water can have the same negative effect on the taste of coffee as using an improper grind. We've found the best water to coffee ratio is two level tablespoons of coffee for every six ounces of water.
Temperature
Water temperature is important. The ideal temperature for all methods of brewing coffee other than espresso is approximately 195-200 degrees F. If the water is too hot, the coffee will be bitter, if it is too cool, it won't extract all the flavor.
